I dug up the other half of the yacon bed, over 50kg of tubers all up, now to clean them and prepare them for storage.
I have plenty of culms (the part to be planted in spring for next year crop) free to members here. I will also bring many at next month meeting for harvest swap
Eat them, just make a yakon pie yesterday using some of the very thin tubers that are too small to keep, turned out quiet good.
The best large undamaged tubers are already boxed for long term storage, last year went all the way to January
